Crispy waffles

Light and extra crispy waffles
Prep Time 10 minutes

Equipment

  • 1 big bowl
  • whisk
  • measuring cups and spoons; cup = 250ml, Tbsp = 15ml, tsp = 5ml
  • waffle maker

Ingredients

  • 2 cup all-purpose flour
  • 4 Tbsp caster sugar (sweet version) or 2 Tbsp (savoury version)
  • 2 tsp baking powder
  • 1 cup oil
  • 1 cup water
  • 3 eggs large
  • 1 pinch salt

Instructions

  • Add all the ingredients into a big bowl and mix everything well with a whisk, until the batter is smooth and there are no lumps of flour.
  • Heat up the waffle maker and pour portions of batter. Bake until they are dark golden.
  • If you are not serving your waffles straight away, you may want to keep the ready ones one the rack in a warmed-up oven (60C fan), adding new servings until you are done with the batter.

Serving

  • Fresh fruit, whipped cream, chocolate sauce or powdered sugar go great with the sweet version.
The neutral/savoury version of waffles is delicious with cottage cheese and smoked salmon, with bacon and fried egg, with mayonnaise, hard-boiled egg and chives, or as an alternative to bread in a sandwich.
