Aromatic and juicy chicken thighs with slices of fennel, lemons and garlic. Great for a family dinner!

This is another recipe where a few simple ingredients create a wonderful, aromatic dish. Fennel, lemons and garlic are placed on the bottom of the baking sheet. Chicken thighs rubbed with spices are placed on top and... that's it!

The end result is amazing – the chicken has a crispy skin, and thanks to the fact that it was baked on fennel and lemons, the meat is perfectly juicy. The fennel itself is delicate and soft. Let's not forget that as a bonus you get a lot of delicious sauce, which is perfect for mopping with a slice of good sourdough bread.

The recipe is for a big batch, so it is perfect for a family dinner, or if you like to cook once every few days.

Aromatic chicken tights baked with fennel, lemons and garlic

Fragrant with citrus and garlic, juicy chicken thighs. Delicate fennel, brilliant sauce – a fairy tale!

Equipment

  • big, deep baking tray or baking dish
  • knife

Ingredients

  • 10 chicken tights
  • 2 bulbs of fennel
  • 2 lemons
  • 1 head of garlic
  • 2-3 Tbsp mixed spices: cumin, chilli, nutmeg, allspice, cloves, dried garlic, pepper, salt details in the recipe below

Instructions

  • Preheat oven to 200℃. If you are using a baking tray, you can line it with baking paper.
  • Wash and slice the fennel and lemons. Cut the garlic head crosswise, do not peel.
  • Prepare the spice mix. I've listed the ingredients, but you can adjust the proportions yourself. Allspice, cumin, and cloves should be ground or crushed in a mortar. Don't be afraid to add more allspice and nutmeg - they go great with chicken, lemons, and slightly aniseed fennel. Don't go crazy with the cloves - 3 should be enough.
    Rub the chicken legs on both sides with the prepared spice mixture.
  • Arrange the slices of fennel on the bottom of a baking sheet or dish. Place slices of lemon and garlic between them. Add a little water.
    Place the chicken thighs on top, skin side up.
  • Bake for about 45 minutes, top and bottom (every oven is different, so check after 40 minutes). When ready, the chicken will be appetizingly browned, with crispy skin, and a lot of golden, aromatic sauce should collect in the dish.
